Original recipe adapted from the Jewish Journal.
Ingredients:
1 cup matzah farfel
1 cup matzah cake meal
1 cup sugar
1/2 teaspoon salt
1/2 cup butter margarine, melted
1 egg
1 teaspoon vanilla or 1 tablespoon orange juice or 1 teaspoon orange zest
1/2 cup sliced almonds
1/2 cup melted chocolate
Preheat the oven to 325 F.
Mix together the matzah farfel, matzah cake meal, sugar and salt. Pour in the melted margarine and combine until the margarine melts. Next add in the egg and vanilla and blend. Mix in almonds.
Form cookies in flat disks and place on a foil lined baking sheet. Bake for 8 to 10 minutes or until golden brown.
When the cookies have cooled, melt the chocolate in the microwave (break up the chocolate, melt for 30 seconds and then stir!) and then use a spoon to drizzle the chocolate over the cookies. Enjoy!
